white bean hummus

This hummus is a surefire crowd pleaser! Easy, fast & inexpensive to make, it’s the perfect accompaniment to any party, or great just to have on hand for a quick fix meal. Packed with satisfying protein, cholesterol-lowering fiber, and memory enhancing thiamin, white beans are a virtually fat-free delicious and nutritious staple for any healthy vegan diet.

Serve as a dip with pita wedges and vegetable crudites, spread on toast, dollop on top of a steamed veggie and quinoa dinner, or make into a sandwich with fresh basil and tomato. As long as you don’t eat it all before it leaves the blender, the possibilities are endless!

white bean hummus

vegan recipe | makes about 1 ½ cups

2 cups cooked white beans
1/4 cup + 1 teaspoon olive oil
1 ½ tablespoon lemon juice
1 large clove minced garlic (about 1 – 1 ½ teaspoons)
3/4 teaspoon cumin
½ teaspoon salt about 1 teaspoon black
pepper (preferably freshly cracked)

Add all ingredients to a food processor and blend until smooth.
